If you’ve never had a Montréal bagel, the first thing to know is this: they’re not trying to be New York bagels. They’re proud to be their own thing .

🔧 How They’re Made

  1. Hand‑rolled dough, which means no two are perfectly identical. The dough includes malt and egg, and no salt.
  2. Honey Water Boil The bagels are plunged into hot honey water, giving them a glossy crust and a subtle caramel note before they even hit the oven.
  3. Wood‑Fired Bake They’re fired in a wood‑burning hearth where heat and smoke blister the crust and leave a faint, irresistible char.

That signature combination — honey + fire — is what makes a MontrĂ©al bagel taste like a MontrĂ©al bagel – sweet, chewy, and slightly smoky.

🕍 A Bit of History

Jewish immigrants brought bagel‑making to Montréal in the early 20th century, and local bakers adapted the craft to the city’s palate and ovens. The result is a style that’s denser, smaller, and sweeter than the New York version.

Two names come up every time you ask locals where to go:

  • Fairmount Bagel (Since 1919)
  • St‑Viateur Bagel (Since 1957)

Both helped turn a neighborhood staple into a citywide obsession.

  • The honey‑kissed exterior adds a caramelized sweetness

💡 Hot tip: The 3:00–5:00 AM Sweet Spot

Most MontrĂ©al bagel shops run 24/7, and but if you go early they’ll be = in full production mode for the morning rush. The shops are quieter, and you can usually ask the staff to hand you a piping‑hot bagel directly from the wooden paddle instead of grabbing one from the bins.

Bagels are best minutes out of the oven, sesame seeds crackling, steam still rising. Order plain or with cream cheese, or pair it with smoked salmon or a strong coffee.
